Rinse the tea
Place the 2 tsp green tea leaves into a heatproof teapot. Pour about 1/2 cup of the boiling water over the leaves, swirl gently for 10โ15 seconds, then pour off this quick rinse water. This removes bitterness and dust.

Brew
Pour the remaining boiling water into the teapot over the rinsed tea leaves. Let steep, uncovered, for 1 minute to start concentrating flavor.

Add sugar and mint
Add 3 tbs granulated sugar and 8 sprigs of rinsed fresh spearmint into the teapot with the steeping tea. Using a long spoon, stir or gently press the mint and sugar into the liquid so the sugar begins to dissolve.

Mix by pouring
To blend flavors and aerate the tea (traditional technique), pour tea from the teapot into a heatproof serving glass or cup and then pour it back into the teapot from a height of several inches. Repeat this transfer 2โ3 times until the sugar is fully dissolved and the tea is slightly frothy.
