    Prepare glass

    Chill a coupe or Nick & Nora glass by placing it in the freezer for a few minutes or filling it with ice water while you build the cocktail.

    Combine ingredients

    In a cocktail shaker, add 2 oz bourbon, 1/2 oz allspice dram, 3/4 oz fresh lime juice, 1/4 oz simple syrup, and 2 dashes Angostura bitters.

    Add ice and shake

    Add enough ice to the shaker to fill it about three-quarters (roughly 1 cup). Secure the lid and shake vigorously for about 12–15 seconds until the shaker is chilled and well-diluted.

    Strain

    Discard the ice or water from the chilled serving glass. Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne and a fine mesh strainer to remove small ice shards and any pulp.

    Garnish and serve

    Express the oils of a lemon twist over the cocktail or drop in a lime wheel for a brighter note. Optionally run the twist around the rim before placing it on the drink. Serve immediately.
