Method

Cocktail

  1. 1

    Prepare glass

Select a highball or Collins glass. Fill the glass about three-quarters full with cracked ice (approximately 1 cup) to properly chill and keep dilution steady.

  2. 2

    Build

In the chilled glass over the cracked ice, pour 2 oz rye whiskey, 0.5 oz fresh lime juice, and 0.25 oz simple syrup. Add 2 dashes of Angostura bitters.

  3. 3

    Top and stir

Gently top with 3 oz chilled dry ginger beer. Using a long bar spoon, give the drink one or two slow, gentle stirs to integrate the ingredients without flattening the ginger beer's carbonation.

  4. 4

    Garnish and serve

Garnish with a lime wedge or wheel on the rim and, if using, a mint sprig lightly slapped and tucked beside the lime. Serve immediately with a straw if desired.

  5. 5

    Notes on variations

For a spicier profile, substitute spicy ginger beer or increase bitters to 3 dashes. For a slightly sweeter version, increase simple syrup to 0.5 oz. Bourbon can be used in place of rye for a softer, sweeter finish.
