    Prepare glass

    Chill a coupe or Nick & Nora glass by filling it with ice water while you build the cocktail.

    Rinse (optional)

    If you prefer a stronger anise note, pour the 0.25 tsp absinthe into the chilled serving glass, swirl to coat the interior, then discard any excess. For a lighter aroma, skip the rinse and add the absinthe directly to the shaker with the other ingredients.

    Combine ingredients

    In a mixing glass or cocktail shaker filled with ice, add 2 oz pisco, 0.75 oz genepy, 0.5 oz blanco vermouth, and 0.25 oz simple syrup (if using). If you skipped the absinthe rinse, add 0.25 tsp absinthe to the mixing glass. Add 1 dash of bitters if you want added complexity.

    Stir and chill

    Stir the mixture for 20–30 seconds (about 15–25 full strokes) until well chilled and properly diluted. If you used a shaker instead of stirring, shake vigorously for about 10–12 seconds and then strain.

    Strain & serve

    Dump the ice water from the chilled serving glass. Double-strain the cocktail into the prepared coupe or Nick & Nora using a Hawthorne and fine strainer (if available) to ensure smooth texture and remove small ice shards.

Garnish

    Express the lemon twist over the cocktail to release oils, then rub the peel around the rim and drop it into the drink.

    Optionally, slap a thyme sprig between your hands to release aromatics and rest it across the rim or float it on the surface for an herbal note and visual appeal.
