Chill glass
Place a Champagne flute or coupe in the freezer for a few minutes or fill it with ice water to chill while you prepare the cocktail.

Combine base ingredients
In a cocktail shaker, add the gin (1.5 oz), fresh lemon juice (0.75 oz), and simple syrup (0.5 oz).

Add ice and shake
Add large ice cubes to the shaker, cap it, and shake vigorously for about 10–15 seconds until the shaker is well chilled and slightly frosted.

Strain into glass
Discard the ice or water from the chilled flute/coupe. Double-strain the shaken mixture into the chilled flute using a Hawthorne strainer and a fine mesh strainer (or just a fine strainer) to remove ice shards and pulp.

Top with sparkling wine
Carefully top the strained mixture with about 3 oz of chilled Champagne (or other dry sparkling wine). Pour slowly to preserve carbonation and a gentle foam.

Garnish and serve
Twist a lemon peel over the drink to express oils, rub the rim if desired, and drop the twist into the flute as garnish. Serve immediately.
