Pancake Batter

Prep dry ingredients

In a large mixing bowl whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined and aerated.

Combine wet ingredients

In a separate bowl or large measuring cup, whisk together the whole milk, heavy cream, eggs, melted butter, and vanilla extract until smooth and homogeneous.

Make the batter by pouring the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined. It's okay if a few small lumps remain — do not overmix or the pancakes will be tough. Let the batter rest for 5–10 minutes to hydrate the flour and thicken slightly.

If batter is very thick after resting, stir in up to 1–2 tablespoons additional milk to reach a thick but pourable consistency (dropping batter forms a thick ribbon).

Cooking Pancakes

Heat a large nonstick skillet or griddle over medium heat (about 350°F / 175°C). Lightly grease with a small pat of butter or a thin film of neutral oil and wipe away excess with a paper towel.

For each pancake, pour about 1/4 cup of batter onto the hot surface, leaving space between pancakes. Cook undisturbed until bubbles form across the surface and the edges look set, about 2–3 minutes.

Flip carefully and cook the second side until golden and cooked through, about 1½–2 minutes more. Adjust heat as needed — lower if they are browning too quickly, higher if they take too long.

Transfer cooked pancakes to a low oven (200°F / 95°C) or a warm plate covered with foil to keep warm while you cook remaining batter. Re-grease skillet sparingly between batches.

Sweet Cream Topping

If using cream cheese for a richer sweet cream, beat the softened 2 oz cream cheese with 2 tablespoons powdered sugar and 1/4 cup of the heavy cream until smooth and lump-free.

In a chilled bowl, whip the remaining heavy cream (about 3/4 cup if cream cheese used, or 1 cup if not) with the remaining powdered sugar and vanilla extract to soft peaks. Gently fold in the cream cheese mixture if using. Taste and add a touch more powdered sugar if you prefer sweeter topping. Chill until ready to serve.

Fruit & Garnishes (choose method)

Fresh berries or strawberries

Rinse berries and gently dry. If using strawberries, hull and halve or slice. Serve fresh on top of pancakes or warmed briefly in a small saucepan with 1 tablespoon sugar until juices release (30–60 seconds).

Bananas Foster-style

In a skillet over medium heat, melt 1 tablespoon butter and add 2 tablespoons light brown sugar. Add sliced banana and cook 1–2 minutes until banana is warmed and caramel begins to form. Spoon over pancakes immediately. (For an adult variation, carefully flame with 1–2 tablespoons rum — optional and only with experience.)

Pineapple upside-down style

In a skillet, melt 1 tablespoon butter with 1 tablespoon light brown sugar until syrupy. Add pineapple rings or chunks and cook until warmed and caramel-coated, 1–2 minutes. Spoon pineapple and syrup over the stack of pancakes; garnish with a dusting of confectioners' sugar if desired.

If using maple syrup, warm before serving and drizzle over pancakes and fruit. Finish with a dollop of sweet cream topping and a sprinkle of confectioners' sugar if desired.

Assembly & Serving

Stack pancakes 3–4 high on each plate. Spoon or spread a generous dollop (2–3 tablespoons) of the sweet cream topping between or on top of pancakes.

Add your chosen fruit: fresh blueberries scattered across the stack, strawberries layered between cakes for a shortcake feel, bananas Foster spooned warm over the top, or caramelized pineapple arranged on the stack for an upside-down effect.

Finish with a drizzle of warmed maple syrup if desired and a light dusting of confectioners' sugar. Serve immediately while pancakes and any caramelized fruit are warm.
