Bacon & Lettuce & Tomato
Prep produce
While bacon cooks, slice the tomato into 1/4-inch slices (about 3–4 slices from one tomato). Rinse and pat dry the lettuce leaves. Lightly salt the tomato slices if desired.
Spread mayo
Spread 2 tsp mayonnaise on two slices of the toasted bread (these will be the inside faces). Reserve remaining mayo for the second sandwich or use both slices if making one large sandwich.
Eggs & Cheese
Beat eggs
Crack the 2 large eggs into a small bowl. Add 1 tbs milk, 1/2 tsp of the salt, and a pinch of black pepper (about 1/8 tsp). Whisk until combined and slightly frothy.
Cook eggs
Heat 1 tsp neutral oil or butter in a nonstick skillet over medium-low heat. Pour in the beaten eggs and cook gently, stirring occasionally for soft-scrambled texture, about 2–3 minutes, or let set and fold for an omelette-style patty, about 1–2 minutes per side. Taste and adjust seasoning with remaining salt and pepper if needed.
Assembly & Finish
Assemble sandwiches
Place one toasted slice (mayo side up) on your work surface. Layer on 2–3 tomato slices, then 2 bacon strips, then 2 lettuce leaves, then the warm egg-and-cheese. Top with 2 more bacon strips if desired. Spread remaining 2 tsp mayonnaise on the other toast slice and place mayo-side down to close the sandwich.
