Prepare glass

Choose a Collins or highball glass. Fill it with ice (large cubes or crushed) to chill while you mix the cocktail.

Build cocktail

Discard excess meltwater from the glass if any. In a cocktail shaker or mixing glass filled with ice, combine 2 oz Tito's Handmade Vodka, 1 oz peach schnapps, 0.75 oz fresh lemon juice, and 0.5 oz house simple syrup. Shake vigorously for 8–12 seconds until well chilled.

Strain and top

Strain the shaken mixture into the prepared Collins glass over fresh ice. Top with about 3 oz chilled club soda, pouring gently to retain carbonation. Stir once gently with a bar spoon to integrate soda without flattening the fizz.

Garnish and serve

Garnish with a peach slice or lemon wheel on the rim and add an optional mint sprig for aroma. Serve with a straw and a small bar spoon.

House simple syrup (if needed)

To make the house simple syrup (1:1), combine 1 cup granulated sugar and 1 cup water in a small saucepan. Heat gently, stirring until the sugar dissolves completely. Remove from heat, cool to room temperature, then store in a sealed container in the refrigerator for up to 2 weeks. Use 0.5 oz per cocktail.
