Preheat and prepare

Preheat your Belgian waffle iron according to manufacturer instructions until it reaches the recommended temperature. Lightly brush or spray the waffle grids with oil or melted butter to prevent sticking.

Whisk dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine sea salt until evenly combined.

Separate and beat eggs: Separate the eggs (yolks and whites) into two bowls. In the bowl with yolks, whisk until smooth. (If you prefer simpler preparation, skip separation and beat whole eggs with the wet ingredients — instructions below include the classic separated-egg method for extra lightness.)

Combine wet ingredients: To the bowl with the egg yolks, add the buttermilk, whole milk, melted butter, and vanilla extract. Whisk until blended.

Make batter: Pour the wet mixture into the bowl of dry ingredients and stir gently with a spatula or whisk until just combined. Do not overmix; a few small lumps are fine. The batter should be thick but pourable. If it looks too thick, add up to 2 tablespoons more milk.

Whip egg whites: Using a clean whisk or electric mixer, beat the reserved egg whites to soft peaks (they should hold a shape but still be glossy). This step makes the waffles lighter and crispier.

Fold whites into batter: Gently fold about one-quarter of the whipped egg whites into the batter to loosen it, then carefully fold in the remaining whites until no large streaks remain. Use gentle strokes to preserve airiness.

Cooking & Serving

Cook waffles: Working with a hot waffle iron, pour an appropriate amount of batter onto the center of each grid (amount depends on your iron; for a standard Belgian waffle iron use about 3/4 to 1 cup). Close the lid and cook until the waffles are deep golden brown and crisp, about 3–5 minutes depending on your machine. Avoid opening too early.

Keep warm: Transfer cooked waffles to a wire rack set over a baking sheet in a 200°F (95°C) oven to keep them crisp while you finish cooking the rest. Do not stack waffles directly on top of each other or they will steam and lose crispness.

Brush with butter: Lightly brush each finished waffle with a little melted butter for flavor and shine, if desired.

Serve: Dust waffles with powdered sugar, top with fresh berries and whipped cream, and serve warm with maple syrup on the side. Offer additional melted butter and syrup to taste.

Storage note: Leftover waffles can be cooled completely and stored in an airtight container in the refrigerator for up to 2 days or frozen for up to 1 month. Reheat in a toaster or oven (375°F/190°C, 6–10 minutes) to restore crispness.
