Preparation of Chips

Prepare the Potatoes

Peel the potatoes and cut them into thick chips (about 1-inch thick). Rinse the chips under cold water to remove excess starch.

Soak the Chips

Place the cut chips in a bowl of cold water and let them soak for at least 30 minutes. This helps to make them crispier when cooked.

Make the Batter

In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in cold sparkling water until the batter is smooth and has a pourable consistency.

Heat the Oil

In a large heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C).

Dip and Fry the Fish

Dip each piece of fish into the batter, allowing excess batter to drip off. Carefully place the battered fish into the hot oil and fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
