Basic Fruit Purée

Prepare sugar syrup
Combine the water (1 cup) and granulated sugar (3 tbs) in a small saucepan. Warm over medium heat, stirring occasionally, until the sugar fully dissolves and the mixture is clear—do not boil. Remove from heat and let the syrup cool to room temperature (about 10–15 minutes).

Prepare fruit
If using whole fruit: wash, peel (if needed), pit and chop as necessary to yield about 4 cups of fruit pieces. If using berries, lightly rinse and drain. If using citrus, you may use strained juice instead of purée; measure to 4 cups total volume including juice and some pulp.

Purée the fruit
Place the prepared fruit in a blender or food processor. Add the cooled sugar syrup (all). Blend on high until completely smooth, 30–60 seconds. Taste for sweetness and texture.

Strain (optional)
For an extra-smooth sorbet, pass the purée through a fine-mesh sieve into a bowl, pressing with a spatula to extract as much purée as possible and discard seeds/solids. If you prefer texture (e.g., peach chunks), reserve some chopped fruit and fold in later.

Add 2 tbs fresh lemon juice and 1 tsp salt to the fruit purée and stir to combine. The acid brightens the flavor and the salt enhances sweetness.

Chill the completed purée in the refrigerator until very cold, at least 1 hour (preferably 2 hours). Cold base churns into sorbet with better texture.

If you have an ice cream maker: pour the chilled purée into the machine and churn according to manufacturer instructions until it reaches a soft-sorbet consistency (usually 20–30 minutes).

If you do not have an ice cream maker: pour the chilled purée into a shallow metal or glass baking pan. Freeze for 30–40 minutes, then remove and vigorously whisk or use a fork to break up developing ice crystals. Return to freezer and repeat whisking every 30 minutes for 2–3 hours until evenly frozen and scoopable.

For a firmer texture, transfer churned sorbet to an airtight container and smooth the top. Press a piece of parchment or plastic wrap directly on the surface to prevent ice crystals. Freeze for an additional 1–2 hours until scoopable firmness is reached.

When ready to serve, remove sorbet from freezer 5–10 minutes before scooping to soften slightly. Garnish with mint leaves and a little citrus zest if desired. Serve in chilled bowls or cones.
