Cook shrimp
Once the liquid reaches a rolling boil, add the shrimp in a single layer. Return to a boil; as soon as the shrimp curl and turn opaque (about 2–3 minutes for large shrimp), immediately remove the pot from heat.

Shock shrimp
Prepare a large bowl of ice water. Using a slotted spoon or a spider, transfer shrimp out of the poaching liquid into the ice bath to stop cooking. Let chill for 5 minutes until completely cool.

Drain and chill
Drain the shrimp well, pat dry with paper towels, then transfer to a bowl and refrigerate for at least 30 minutes (or up to 4 hours) until ready to serve. Reserve 1/4 cup of the poaching liquid if you want to thin the sauce later.

Combine ingredients
In a medium bowl, whisk together 1 cup ketchup, 3 teaspoons prepared horseradish, 1 tablespoon fresh lemon juice, 1 teaspoon Worcestershire sauce, 2 dashes hot sauce and 1 teaspoon smoked paprika until smooth.

Adjust seasoning
Taste the sauce and season with 1 teaspoon salt and 1 teaspoon freshly ground black pepper. If the sauce is too thick, whisk in up to 1/4 cup reserved poaching liquid or cold water, 1 tablespoon at a time, to reach desired consistency. Chill the sauce at least 15 minutes for flavors to meld.

Arrange
Fill a serving platter or individual glasses with a layer of ice. Arrange chilled shrimp on the ice in a ring or fan shape, leaving a well in the center for the cocktail sauce.

Garnish and finish
Spoon the cocktail sauce into a small bowl placed in the center or serve sauce on the side. Garnish shrimp with lemon wedges and sprinkle chopped parsley over the platter. Serve immediately.
