Prep Fish

Pat cod fillets dry with paper towels and cut into four sandwich-sized portions (about 4 oz each). Season both sides with 1 tsp salt and 1/2 tsp black pepper.

Make Batter

In a medium bowl whisk together 3 tbs flour and 2 tbs cornstarch. In a separate small bowl beat the egg, then whisk in the cold sparkling water. Combine wet into dry and whisk briefly until just combined (a few small lumps are fine). Keep batter cold until ready to fry.

Fry Fish

Pour about 1/2 inch of vegetable oil into a large heavy skillet (or heat 1 cup in a cast-iron pan). Heat over medium-high until oil reaches 350°F (175°C) or a drop of batter sizzles immediately. Lightly dust each piece of fish with 1 tbs flour (from the reserved flour) before dipping into the batter—this helps adhesion. Dip fish into batter to coat, let excess drip off, then carefully lay into hot oil. Fry 3–4 minutes per side until golden brown and an internal temperature of 145°F (63°C) or flaky. Do not overcrowd; fry in batches if necessary. Transfer to a wire rack set over a baking sheet or paper towels to drain; keep warm in a 200°F (95°C) oven if needed.

House Slaw

Combine Veggies

In a large bowl toss together 2 cups shredded green cabbage, 1 cup shredded red cabbage, 1/2 cup grated carrot, and 1/4 cup thinly sliced red onion.

Make Slaw Dressing

In a small bowl whisk 3 tbs mayonnaise, 1 tbs apple cider vinegar, 1 tsp Dijon mustard, 1/2 tsp sugar, 1/2 tsp salt and 1/4 tsp black pepper until smooth.

Dress Slaw

Pour dressing over the cabbage mixture and toss to combine. Taste and adjust seasoning. Refrigerate until ready to build sandwiches (can be made up to 1 day ahead).

Awesome Sauce & Build

Make Awesome Sauce

In a small bowl combine 1/2 cup mayonnaise, 2 tbs ketchup, 1 tsp hot sauce, 1 tsp lemon juice, 1/2 tsp Worcestershire sauce, 1/4 tsp garlic powder, and 1 tbs finely chopped dill pickle or relish. Stir until smooth and chill briefly to let flavors meld.

Toast Buns

Spread softened butter on cut sides of the 4 buns. Toast in a skillet over medium heat or under a broiler until golden, about 1–2 minutes per side. Keep warm.

Assemble Sandwiches

Spread about 2 tbs of awesome sauce on the bottom half of each toasted bun. Place a handful (about 1/2 cup) of house slaw over the sauce. Top with one piece of crispy cod. Spoon an additional 1 tbs sauce on top of the fish if desired and add a few thin rings of raw red onion from the 1/4 cup reserved. Close with the top bun. Serve immediately with lemon wedges for squeezing.
