Prepare the Steak

Take the flat iron steak out of the refrigerator and let it rest at room temperature for about 30 minutes before cooking. This ensures even cooking.

Season the Steak

Rub both sides of the steak with olive oil, then season generously with salt and black pepper.

Cook the Steak

Preheat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from heat and let rest for 5 minutes before slicing.

Sauce au Poivre

Sauté the Shallots

In a saucepan over medium heat, melt the butter. Add the finely chopped shallots and sauté until translucent, about 2-3 minutes.

Make the Sauce

Add the crushed black peppercorns and beef broth to the saucepan, bringing it to a simmer. Cook for about 5 minutes to reduce slightly.

Add Cream

Stir in the heavy cream and Worcestershire sauce. Simmer for another 2-3 minutes until the sauce thickens slightly. Season with salt to taste.

Parmesan-Truffle Fries

Prepare the Potatoes

Preheat your oven to 425°F (220°C). Cut the russet potatoes into evenly sized fries.

Toss the Fries

In a large bowl, toss the fries with olive oil and salt until evenly coated.

Bake the Fries

Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, turning halfway through, until golden brown and crispy.

Finish with Parmesan and Truffle Oil

Once the fries are done, remove them from the oven and immediately sprinkle with grated Parmesan cheese and drizzle with truffle oil. Toss to combine and garnish with fresh parsley.
