Preparation
Preheat the Oven
Preheat your oven to 200°C (400°F).
Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half.
Cook the Bacon
In a skillet, cook the double smoked bacon over medium heat until crispy. Remove from heat and chop into small pieces.
Cooking
Roast the Brussels Sprouts
Toss the halved Brussels sprouts with olive oil, salt, and black pepper. Spread them in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and tender.
Combine Ingredients
Once the Brussels sprouts are roasted, remove them from the oven and mix in the caraway sauerkraut and chopped bacon. Return to the oven for an additional 5 minutes.
Serving
Plate the Dish
Serve the roasted Brussels sprouts topped with a dollop of crème fraîche.
