Strawberry Shake

Enjoy a creamy and refreshing regular-sized strawberry shake made with ripe strawberries and smooth vanilla ice cream.

Okanagan Valley, BC - 2019 SPARKLING CHARDONNAY

Begin by harvesting ripe Chardonnay grapes from the vineyard in Okanagan Valley. Ensure the grapes are not overripe to maintain acidity.

Harvesting Grapes

Crush the harvested grapes to release the juice. Press the crushed grapes to separate the juice from the skins and seeds.

Crushing and Pressing

Transfer the juice into a fermentation tank. Add the yeast to the juice and stir gently. Allow the mixture to ferment for about 2 weeks at a controlled temperature.

Fermentation

After the primary fermentation, add sugar to the wine before bottling. This will initiate the second fermentation in the bottle, creating the sparkling effect.

Second Fermentation

Bottle the wine with a cork and wire cage to prevent the cork from popping due to pressure. Store the bottles horizontally in a cool, dark place for at least 6 months.

Bottling

After aging, gradually tilt and rotate the bottles to collect sediment in the neck of the bottle. This process may take a few weeks.

Riddling

Remove the sediment by freezing the neck of the bottle and ejecting the frozen sediment. Add a dosage of sugar and wine mixture if desired, then re-cork the bottles.

Disgorging and Dosage

Allow the wine to age for another month or more before it is ready to be enjoyed.
