Base

Method

Base

  1. 1

    Sweeten and flavor yogurt

In a medium bowl, add 2 cups organic plain Greek yogurt. Stir in 2 tablespoons honey (or maple syrup) and 1 teaspoon vanilla extract until smooth and evenly combined. Taste and adjust sweetness as desired.

Granola

  1. 2

Measure out 1 cup granola and 2 tablespoons chopped toasted nuts. If your granola is very hard, break it into slightly smaller clusters with your hands so spooning is easier. Set aside.

Berries & Fruit

  1. 3

Rinse all berries gently in a colander and pat dry with paper towels. Hull and quarter strawberries; keep blueberries and raspberries whole. If using banana, slice just before assembling to prevent browning.

  2. 4

If berries are cold from the fridge, let them sit 3–5 minutes at room temperature to bring out their flavor before assembling.

Assemble

  1. 5

    Layer the parfait

Divide the sweetened yogurt between two serving bowls or jars (about 1 cup yogurt per serving). Spoon half of the granola mixture (about 1/2 cup) over the yogurt in each bowl. Arrange the berries on top and between the granola in an attractive pattern, reserving a few berries for garnish.

  2. 6

Sprinkle the remaining granola and chopped toasted nuts over the berries for crunch.

Finish & Serve

  1. 7

Zest 1 teaspoon lemon over the assembled bowls for brightness. Tear or chiffonade the 6 fresh mint leaves and scatter them on top.

  2. 8

Drizzle about 1 teaspoon extra honey over each bowl (or divide 1 teaspoon total) and finish with a pinch of freshly ground black pepper if using — it adds a subtle savory contrast.

  3. 9

Serve immediately so granola stays crisp. If preparing up to 1 hour ahead, store yogurt and granola separately and assemble just before serving.
