Lamb saddle

Prepare and season
Remove lamb saddle from refrigerator 30 minutes before cooking to come toward room temperature. Pat dry with paper towels. Season all over with 2 tsp kosher salt and 1 tsp freshly ground black pepper, pressing seasoning into the meat.

Sear
Preheat oven to 190°C (375°F). Heat a large ovenproof skillet or roasting pan over medium-high heat. Add 2 tbs olive oil. When hot and shimmering, place the lamb saddle fat-side down and sear without moving for 3–4 minutes until deeply golden. Turn and sear remaining sides about 2 minutes per side so it is evenly browned.

Roast with aromatics
Add 2 tbs unsalted butter, 3 smashed garlic cloves, 2 rosemary sprigs and 4 thyme sprigs to the pan. Spoon melted butter and pan juices over the saddle for 1 minute, then transfer the skillet to the preheated oven. Roast for 15–20 minutes for medium-rare (internal temperature 57–60°C / 135–140°F). For medium, roast 22–26 minutes. Baste once halfway through roasting with pan juices.

Rest and slice
Remove lamb from oven, transfer to a cutting board, tent loosely with foil and rest for 10–12 minutes. Resting allows the juices to redistribute. Carve saddle into 2–3 cm thick cutlets or double-cut chops and keep warm while finishing sauce and cabbage.

Prepare cabbage
While lamb roasts, core the cabbage and cut into thin slices (about 3–4 mm). Heat a large sauté pan over medium heat and add 2 tbs unsalted butter. When melted and foaming, add the finely sliced shallot and sauté 2–3 minutes until translucent.

Cook cabbage and apple
Add the sliced cabbage and thin apple slices to the pan, toss to coat. Cook, stirring occasionally, until cabbage begins to soften, about 8–10 minutes. Add 1 tbs apple cider vinegar and 1 tsp brown sugar; stir to combine. Continue cooking until cabbage is tender but still with slight bite, about 4–6 more minutes. Season with 1 tsp salt and 1/2 tsp black pepper. Keep warm.
Morel mushrooms & sauce

Rehydrate morels
Place 30 g dried morel mushrooms in a heatproof bowl and pour 250 ml hot water over them. Let soak for 20–30 minutes until softened. Reserve the soaking liquid by straining through a fine sieve lined with paper towel or coffee filter to remove grit; reserve both morels and strained liquid separately.

Sauté mushrooms
Remove morels from soaking liquid, squeeze gently and coarsely chop any larger pieces. In a medium skillet over medium heat, melt 2 tbs unsalted butter. Add 1 finely minced shallot and sauté 1–2 minutes until fragrant. Add the rehydrated morels and sauté 3–4 minutes until they begin to brown and their liquid has mostly evaporated.

Deglaze and reduce
Pour in 60 ml dry white wine to deglaze the pan, scraping up any browned bits. Let the wine reduce by about half, 2–3 minutes. Add 120 ml stock and 3–4 tbs of the reserved, strained morel soaking liquid (avoid any sediment). Simmer until reduced by roughly one-third, about 4–5 minutes.

Finish sauce
Lower heat and stir in 60 ml heavy cream and 1 tsp Dijon mustard. Simmer gently 2–3 minutes until sauce slightly thickens. Stir in 1 tsp fresh lemon juice, 0.5 tsp salt and 0.25 tsp black pepper. Whisk in 1 tbs extra butter off heat to give sheen. Taste and adjust seasoning. If sauce is too thin, simmer a minute longer; if too thick, add a splash of stock.
Finishing & plating

Plate and garnish
Divide warm cabbage among four plates (or as desired). Arrange sliced lamb saddle atop or alongside cabbage. Spoon warm morel cream sauce over the lamb and a little onto the cabbage. Sprinkle 2 tsp chopped flat-leaf parsley over the dish for color. Serve immediately.
