Thinly slice or prepare 12 small toasts: blinis, rye crisps, or thin baguette slices. Lightly toast until just crisp and warm. Finely chop 1 tablespoon fresh chives and roughly chop microgreens or dill if using. Set to the side on a plate.

Remove the trout roe from refrigeration and let sit, covered, at cool room temperature for 5–10 minutes. This brightens flavor and texture without warming it fully.

Place 1 tablespoon cold unsalted butter into a small bowl and add 2 tablespoons crème fraîche. Grate zest from the quarter lemon and add the zest to the mixture. Squeeze 1/2 teaspoon lemon juice from the lemon (about a squeeze from the 1/4 lemon) into the bowl. Add a pinch (about 1/8 tsp) sea salt and 1/4 tsp freshly ground black pepper. Whisk or mash with a small fork until combined to form a soft spreadable smear. Taste and adjust with an additional small pinch of salt or more lemon juice if desired.

Using a small knife, spread about 1/2 teaspoon of the butter–crème fraîche mixture onto each toasted blini or crisp. This creates a rich, slightly tangy base that protects the delicate roe from direct contact with the toast and enhances mouthfeel.

Using a small spoon (or mother-of-pearl spoon to avoid metallic taste), gently spoon about 1/2 teaspoon of Kaviari trout roe onto the center of each prepared toast. Distribute roe evenly — you should use roughly 0.25 cups (about 12 teaspoons) total across 12 canapés.

Finish and garnish
Sprinkle a small pinch of finely chopped chives (about a scant 1/4 teaspoon per canapé) over each roe-topped toast. Garnish some pieces with microgreens or a small dill sprig if desired. Do not over-salt; the roe is already savory. Serve immediately so the toast remains crisp and the roe is cool.
