Marinated Shrimp

    Prepare shrimp and marinade

    Pat the shrimp dry with paper towels. In a medium bowl combine 2 tbs olive oil, 2 tbs lemon juice, 2 tsp minced garlic, 1 tsp smoked paprika, 1 tsp dried oregano, 1 tsp red pepper flakes, 1 tsp kosher salt and 1 tsp freshly ground black pepper. Whisk until blended.

    Add the shrimp to the bowl and toss until every piece is evenly coated. Cover and refrigerate for 15–30 minutes (no longer than 1 hour) to allow flavor to develop.

    Cook the shrimp

    Heat a large skillet over medium-high heat until hot (about 2 minutes). Add the marinated shrimp in a single layer, pouring in any leftover marinade. Cook for 1.5–2 minutes on the first side without moving so a light sear forms, then flip and cook another 1–2 minutes until shrimp are opaque and firm and register about 120–130°F (49–54°C). Total cook time should be 3–4 minutes depending on size.

    Optional butter finish

    If using butter, reduce heat to medium-low and add 1 tbs unsalted butter to the pan. Swirl the pan until butter melts and lightly coats the shrimp, 30–45 seconds.

    Garnish and serve

    Remove shrimp from heat. Sprinkle with 2 tbs chopped fresh parsley and serve immediately with lemon wedges for squeezing over the shrimp.
