Cooking the Grits

Prepare the Grits

In a large saucepan, bring water to a boil. Stir in the grits and salt. Reduce heat, cover, and simmer for about 20 minutes or until thickened, stirring occasionally.

Add Jalapeño and Cheese

Once grits are cooked, stir in diced jalapeño, butter, and white cheddar cheese until well combined and creamy. Set aside.

Making the Diavolo Sauce

Sauté Garlic

In a saucepan, heat olive oil over medium heat. Add minced garlic and crushed red pepper flakes, sautéing until fragrant, about 1 minute.

Simmer Sauce

Add crushed tomatoes, salt, and black pepper. Simmer for about 10 minutes, then stir in fresh basil. Remove from heat.

Cooking the Shrimp

Sear the Shrimp

In a skillet, heat olive oil over medium-high heat. Season shrimp with salt and black pepper. Add shrimp to the skillet and cook for 2-3 minutes on each side, until pink and opaque. Add lemon juice and toss to coat.

Assembly

Plate the Dish

Spoon a generous portion of the jalapeño white cheddar grits onto each plate. Top with the seared shrimp and drizzle with diavolo sauce. Serve hot.
