Seasonal Sorbet (yields ~2 cup sorbet; scale if making two flavors)
Make simple syrup
Combine 2 cups water and 1 cup granulated sugar in a medium saucepan. Heat over medium, stirring until sugar dissolves. Bring to a gentle simmer for 2 minutes, then remove from heat and allow to cool to room temperature (about 20 minutes).
Prepare fruit purée
While syrup cools, puree 2 cups of ripe seasonal fruit in a blender until smooth. For very pulpy fruits, press the purée through a fine-mesh sieve to remove seeds or fibers for a silky sorbet.
Combine and balance
Whisk the cooled simple syrup into the fruit purée. Add 2 tablespoons fresh lemon juice and 1 teaspoon optional liqueur (if using) to brighten flavor and slightly reduce freezing hardness. Taste and adjust with more lemon or a tablespoon more sugar if needed.
Chill the mixture
Cover the sorbet mix and chill thoroughly in the refrigerator until very cold, at least 2 hours (or overnight) — colder mix yields a smoother churn.
Churn and freeze
Freeze the chilled sorbet mix in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency (typically 20–30 minutes). Transfer to an airtight container and freeze at least 2–4 hours to firm up before serving.
Notes for two flavors
If making two sorbet flavors, halve the simple syrup and fruit purée quantities per flavor or make separate syrup (syrup can be scaled). Label containers to avoid mixing flavors.
Gelato Base (yields ~1 quart; choose flavoring add-in)
Warm milk and cream
In a medium saucepan, combine 2 cups whole milk and 1 cup heavy cream with the split vanilla bean (or 1 tsp vanilla extract) and a pinch of salt. Warm over medium until just below simmer (small bubbles form at edges), about 5–7 minutes. Remove from heat and let steep 10 minutes if using vanilla bean, then remove bean pod.
Temper egg yolks
In a medium bowl, whisk 4 egg yolks with 1 cup granulated sugar until pale and slightly thickened. Slowly pour about 1/2 cup of the warm milk mixture into the yolks while whisking constantly to temper. Then gradually whisk the tempered yolks back into the saucepan with the remaining milk mixture.
Cook custard
Return saucepan to low-medium heat and cook, stirring constantly with a spatula, scraping the bottom, until the custard thickens enough to coat the back of a spoon (temperature ~170–175°F / 77–80°C). Do not boil. This will yield a thickened gelato base.
Add flavoring
Remove from heat and stir in 1/2 cup chosen flavoring (e.g., melted chocolate for chocolate gelato, pistachio paste for pistachio, or 1/2 cup fruit purée for fruit gelato). If using extract/espresso, add now. Mix until fully incorporated.
Cool and chill
Strain the custard through a fine-mesh sieve into a clean bowl to remove any coagulated bits. Cover the surface with plastic wrap to prevent a skin and refrigerate until completely chilled, at least 4 hours or overnight.
Churn and harden
Churn the chilled gelato base in an ice cream maker according to manufacturer's instructions until it reaches a dense, creamy texture (typically 20–30 minutes). Transfer to an airtight container and freeze 2–4 hours to firm to scoopable consistency.
Finishing & Serving
Scoop two total scoops per order — you may serve two scoops of the same variety (e.g., two scoops gelato) or one sorbet + one gelato scoop. For a clean presentation, dip the scooper in warm water between scoops and wipe dry.
Place scoops in a chilled dish or bowl. Garnish with a sprig of fresh mint or small pieces of the seasonal fruit. Add a wafer or cookie if desired.
Serve immediately. If storing, keep sealed in the coldest part of the freezer and soften at room temperature 5–10 minutes before scooping.
