Build the cocktail

Fill a highball or Collins glass about halfway with ice (large cubes preferred). Add 3 oz Pimm's No.1, 0.75 oz fresh lemon juice and 0.5 oz simple syrup directly into the glass.

Light muddle

Gently add the cucumber slices and the halved strawberry to the glass and use a muddler or the back of a spoon to lightly bruise them — you want to release aroma and a little juice, not pulverize.

Finish & Garnish

Top the glass with 4 oz chilled ginger beer, giving the drink a gentle stir with a bar spoon to integrate — stir 3–4 slow turns to combine without flattening the ginger beer.

Add the lemon wheel and mint sprigs as garnish. Tuck the mint into the top of the drink and slap it once between your palms before adding to release the oils. Leave one cucumber slice on the rim if desired.

Serve immediately with a straw and an optional extra ice cube if the drink has diluted — enjoy chilled.
