Prepare

Chill a coupe or martini glass in the freezer or fill with ice and set aside. If using fresh pomegranate juice, strain any pulp so the cocktail is smooth.

Dry Shake (if using egg white)

If you opted for egg white to add a silky foam, add 0.5 egg white to a cocktail shaker and dry shake (no ice) vigorously for 15–20 seconds to build foam.

Mix

Add the vodka (2 oz), Italicus (0.75 oz), pomegranate juice (1.25 oz), fresh lime juice (0.5 oz), and simple syrup (0.25 oz, optional) into the shaker. If you performed a dry shake with egg white, add that foam back into the shaker now (or include the egg white here and skip a separate dry shake).

Shake with ice

Fill the shaker with ice (about 3/4 full or ~1 cup), secure the lid and shake vigorously for 12–18 seconds until well chilled and slightly frothy (longer if you included egg white).

Double Strain

Double strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to catch ice shards and any solids for a smooth appearance.

Garnish & Finish

Carefully drop 1 teaspoon of pomegranate seeds into the center of the drink and float a thin lime wheel or twist on the rim. Optionally add 2 dashes of Angostura or a citrus bitters on the foam to add aromatic complexity.

Serve

Serve immediately while cold. The drink yields a balanced interplay of bright citrus, floral bergamot from Italicus, and the sweet-tart pomegranate backbone.
