Chill glass

Place a wine glass or large stemmed glass in the freezer for 5–10 minutes or fill it with ice water while you gather ingredients to ensure the drink stays cold longer.

Add ice

Fill the chilled wine glass about three-quarters full with fresh ice (approximately 1 cup).

Pour Cappelletti

Measure and pour 2 oz Cappelletti over the ice. Pouring the bitter/apéritif first helps it sit nicely in the glass when the Prosecco is added.

Top with Prosecco

Slowly add 3 oz chilled Prosecco to the glass. Pour gently down the side of the glass or over the back of a spoon to preserve bubbles and create gentle layers.

Add soda

Top with 1 oz chilled soda water for a touch of dilution and effervescence. Adjust soda between 0–1 oz to taste if you prefer a stronger or lighter spritz.

Stir gently

Give the drink one or two gentle short stirs with a bar spoon to integrate the ingredients without flattening the bubbles.

Garnish and serve

Garnish with 1 fresh orange slice on the rim and, if using, an orange twist. Serve immediately while cold and effervescent.
