Method
Base Spirit
Measure spirit
Select your house spirit (vodka, gin, or blanco tequila). Measure 2 oz and set aside in the mixing glass or shaker.
Seasonal Fruit Syrup
Macerate fruit
Place the 3 oz chopped seasonal fruit in a small bowl or the bottom of a shaker. Add 2 tablespoons granulated sugar and 1/2 oz fresh lemon juice. Muddle vigorously until the fruit releases its juices and sugar dissolves (about 30–45 seconds).
Make quick syrup (if needed)
If the fruit is very firm or not yielding much liquid, warm 2 tablespoons water and stir in the muddled fruit mixture until sugar dissolves and syrup forms. Allow to cool slightly (2–3 minutes) before proceeding. This step creates a short, fresh fruit syrup and ensures an even texture in the soda.
Strain (optional)
For a smoother soda, press the muddled fruit through a fine mesh strainer into a measuring cup, capturing about 1–1.5 oz of syrup. Reserve any pulp for garnish or discard. If you prefer a pulpy, rustic soda, skip straining and use the whole muddled mixture.
Assembly & Finish
Combine spirit and syrup
Add the measured 2 oz spirit to the mixing glass or shaker with the freshly made fruit syrup (about 1–1.5 oz). Fill a highball glass with 1 cup of ice.
Build the drink
Pour the spirit + syrup mixture over the ice in the highball glass. Top gently with 4 oz club soda (or lemon-lime soda for a sweeter profile). Stir once or twice gently to combine without flattening the soda.
Add bitters & herb
If using, add 2 dashes of Angostura bitters on top for aromatic depth. Clap the herb sprig between your palms to release aromatics and either drop it into the drink or slap it on the rim as garnish.
Garnish & serve
Garnish with a citrus wheel or a wedge of the seasonal fruit. Serve immediately with a straw or stirrer.
