Method

Prepare Glass

Select a large tiki mug or highball glass. Fill it with crushed ice to chill while you build the cocktail.

Make Zombie Base

Combine Ingredients

In a cocktail shaker, add aged rum, dark rum, fresh lime juice, lemon juice, grenadine, falernum, simple syrup, pineapple juice and orange juice. Add 2 dashes of Angostura bitters.

Shake

Add a generous handful of ice (not crushed) to the shaker and shake vigorously for 10–15 seconds until well chilled and slightly frothy.

Assemble

Dump the chilled crushed ice from the glass and refill the glass three-quarters full with fresh crushed ice. Strain the shaken mixture over the crushed ice, allowing the liquid to permeate the ice mound.

Float Overproof Rum

Carefully float the overproof rum on top by pouring it over the back of a bar spoon so it rests on the ice surface.

Garnish & Serve

Garnish with a sprig of mint (slap it between your palms first to release aroma) and a dehydrated orange wheel or a cocktail cherry. Optionally add a straw and a long swizzle stick.

Serve immediately with a warning that the cocktail is strong. If desired, light the floated overproof rum briefly for a flaming presentation—only if experienced and using appropriate safety precautions; extinguish before drinking.
