Prepare ingredients
Chill an old-fashioned (rocks) glass by filling it with ice or placing it in the freezer for a few minutes. If you plan to use simple syrup and don't have it ready, combine equal parts granulated sugar and hot water, stir until dissolved and cool before using.
Dry shake (if using egg white)
If using egg white for a silky foam, add 2 oz bourbon, 0.75 oz fresh lemon juice, 0.75 oz simple syrup, and 0.5 oz egg white to a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds. This 'dry shake' emulsifies the egg white and creates a frothy texture.
Wet shake
Add ice to the shaker (about 4–6 large cubes). If you did the dry shake, add ice to the same shaker. If not using egg white, combine bourbon, lemon juice, and simple syrup in the shaker with ice. Shake hard for 10–15 seconds until the outside of the shaker is frosty and the mixture is well chilled.
Strain and serve
Discard the ice from the chilled glass. Double-strain the cocktail into the chilled old-fashioned glass over fresh ice (or strain into the glass without ice for a 'up' serve). Use a fine mesh strainer in addition to the shaker strainer when you used egg white to remove small foam particles.
Serve
Serve immediately. Sip and enjoy responsibly.
