Prepare glass
Choose a large wine glass and fill it about two-thirds full with ice cubes to chill the glass and keep the drink cold.
Build the spritz
Pour the chilled Aperol into the glass over the ice, then add fresh lime juice and simple syrup. Gently stir once with a bar spoon to combine without flattening the bubbles.
Add Prosecco and soda
Slowly pour chilled Prosecco into the glass, aiming to preserve as much carbonation as possible. Top with chilled soda water. Stir gently once more to integrate.
Garnish & Serve
