Cocktail

Optional/For Serving

Method

Prepare Cocktail

1

Chill glass

If desired, place a highball glass or copper mug in the freezer for 5–10 minutes to chill, or fill with ice and discard the water before building the drink.

2

Fill the chilled glass or copper mug with the measured ice (use 1 cup cubed ice or 1/2 cup crushed ice if using a mule-style presentation).

3

Pour 2 oz light rum over the ice.

4

Add 1/2 oz fresh lime juice.

5

Top with 4 oz ginger beer. Pour gently so the ginger beer layers slightly without vigorous stirring.

6

Dash 2 quick dashes of Angostura bitters over the top; the bitters will float and add aromatic complexity.

7

Give the drink a gentle stir (1–2 revolutions) to integrate the lime and rum with the ginger beer without losing much carbonation.

8

Garnish with a lime wedge on the rim and an optional mint sprig tucked into the top of the drink.

9

Serve immediately with a straw or cocktail stirrer.

Notes

10

To make multiple servings, multiply the ingredient quantities by the number of servings and build each drink individually to preserve carbonation.

11

Use a spicy or dry ginger beer (not ginger ale) for the proper bite and effervescence typical of a ROCKSHORE-style drink.
