Select a well-lit, odor-free area with a long table. Set out a place for each guest with one white and one red wine glass (place the white glass to the right/front of the red), a water glass, tasting sheet, and pen.

Prepare room and table

Arrange spittoons or small disposable cups discreetly at each place and place the water pitcher within reach for rinsing between wines. Put out labels or numbered stickers and apply them to bottles so guests taste blind if desired.

Place small plates, ramekins and serving utensils where guests can reach the cheeses, olives, nuts and cured meats without cross-contaminating items.

Chill the Vinho Verde and Alvarinho to about 8–10°C (45–50°F). Chill the fuller-bodied white to 10–12°C (50–54°F). Bring red wines to cellar temperature (15–18°C / 59–64°F). If reds are too warm, open bottles 20–30 minutes before tasting to let them breathe; decant heavier Douro red if desired.

Pour small tasting pours (about 60–90 ml) into each appropriate glass (one wine at a time). For a session of six wines and six guests, pour roughly 60 ml per person per wine to allow for spilling and small tastes (1 bottle serves ~6–7 tasting pours). Reserve Port for the final course and pour 30–50 ml per person.

Place tasting note cards or sheets near each place and write the order of wines and bottle numbers if blind tasting.

Taste from light to full: start with Vinho Verde (light, high acidity), then Alvarinho (aromatic white), then the fuller Douro/Encruzado white, followed by the lighter red (Dão/Bairrada), then the fuller Douro red, and finish with Port. Encourage guests to look (appearance), swirl and sniff (aromas), taste (note acidity, tannin, body, flavors), and spit or swallow according to preference.

Order and approach

For each wine, allow 3–5 minutes: note color and clarity, tilt the glass and observe; swirl gently and take several short sniffs to capture initial aromas; then take a medium sip, let it coat the mouth, note acidity, sweetness, tannin, body, flavors, and finish. Write impressions on the tasting sheet.

Between wines, cleanse the palate with plain water and a small bite of plain bread or cracker. Use the spittoons if spitting. Encourage discussion after each wine (1–2 minutes) to share impressions.

Offer small portions of cheese, cured meats, olives and nuts to taste with appropriate wines. Suggest pairing Vinho Verde with light seafood or olives, Alvarinho with shellfish or goat cheese, fuller white with richer fish and soft cheeses, lighter red with charcuterie, fuller Douro red with cured meats and stronger cheeses, and Port with dark chocolate or aged cheeses.

Encourage guests to try a plain sip of wine first, then a combination with a small bite, and note how flavors change (acid softens with cheese, tannins feel smoother with fat).

Serve Port last with small pours of dark chocolate and/or a small cheese. Allow guests to compare final impressions and complete tasting sheets.

Collect tasting sheets (if you want to review results later), dispose of or clean spittoons and glasses, and provide extra water and light snacks if guests will continue to enjoy the wines.

Total estimated active time: set up 30 min + wine prep 15 min + tasting 45–60 min + finishing 10 min = approximately 100–115 minutes. Clean glasses and utensils promptly after the event; decanted wines that remain can be re-corked and refrigerated where appropriate.
