Method
Prepare glass and sugar rim
Chill a rocks or coupe glass in the freezer for 5–10 minutes or fill with ice water while you prepare the drink.
Pour granulated sugar onto a small plate and spread into an even layer.
Run the cut half-lime around the outer rim of the chilled glass to moisten it evenly.
Mix the cocktail
Fill a cocktail shaker with about 1 cup of ice.
Add 2 oz Clean Co. tequila, 2 oz fresh pineapple juice, 0.75 oz fresh lime juice, and 0.5 oz simple syrup to the shaker.
Seal the shaker and shake vigorously for 10–15 seconds until well chilled and slightly frothy. (If using fresh pineapple chunks instead of juice, muddle 0.5 cup chopped pineapple in the shaker before adding ice and the other liquids; then shake longer, about 15–20 seconds.)
Garnish and serve
Garnish with a pineapple wedge or lime wheel on the rim.
Taste and adjust: if you prefer sweeter, stir in up to 1 tsp extra simple syrup; if too sweet, add a few drops more lime juice.
Serve immediately.
