Prepare glass and mint
Place 8 fresh mint leaves in a sturdy Collins or highball glass. Reserve 1 small sprig for garnish.
Muddle
Add 0.75 oz fresh lime juice and 1 oz passionfruit syrup to the glass with the mint. Gently muddle (press and twist) the mint 6–8 times — enough to release aromatic oils but not shred the leaves.
Add rum and optional sweetener
Pour in 2 oz Havana 3 Year Rum. If you prefer a sweeter cocktail or your passionfruit syrup is tart, add 0.25 oz simple syrup. Stir briefly (4–6 seconds) to combine and dissolve syrup into the muddled mixture.
Add ice
Fill the glass with crushed ice to the top (about 1 cup). Packing the ice slightly will help chill and dilute the drink to the correct strength.
Top with soda
Top the drink with approximately 3 oz chilled soda water. Gently fold the soda into the cocktail with a bar spoon 3–4 times to combine without flattening the carbonation.
Finish and garnish
If using, spoon 0.5 oz passionfruit pulp on top as a float for texture and appearance. Garnish with a lime wheel or wedge on the rim and the reserved mint sprig lightly slapped between your hands to release aroma, then placed into the glass.
Serve
Serve immediately with a straw and a small stirring spoon so the drinker can re-mix if the syrup/pulp settles.
