Preheat and prepare

Preheat oven to 275°F (135°C). Line a baking sheet with parchment paper. Using a pencil, draw a 8-inch (20 cm) circle on the paper as a guide; flip the paper so pencil mark is underneath.

Beat egg whites

In a completely clean, dry mixing bowl, whip the 4 room-temperature egg whites on medium speed until soft peaks form (peaks that bend over).

Add sugar gradually

With the mixer running on medium-high, add granulated sugar 1 tablespoon at a time, waiting a few seconds between additions so the sugar dissolves. Continue whipping until the meringue is glossy and forms stiff, clean peaks (about 6–8 minutes). To test, rub a bit between your fingers: it should feel smooth, not gritty.

Stabilize and flavor

Sprinkle in the 2 tbsp powdered sugar and 1 tsp cornstarch, then add 1 tsp vanilla extract and 1 tsp vinegar. Fold gently with a spatula just to incorporate and maintain volume.

Shape and bake

Spoon the meringue onto the prepared circle, shaping into a disk with slightly higher edges to form a shallow well in the center for cream and berries. Smooth the outside and create gentle peaks if desired. Reduce oven temperature to 250°F (120°C) and bake for 60–75 minutes until crisp to the touch and pale ivory. Turn off the oven, crack the door and let meringue cool completely inside (at least 2 hours or overnight) to prevent cracks.

Chantilly Cream

Chill your mixing bowl and whisk for 10–15 minutes in the fridge if possible. Pour 1 cup of cold heavy cream into the chilled bowl. Begin whipping on medium speed until the cream starts to thicken.

When soft peaks form, add 2 tbsp powdered sugar and 1 tsp vanilla extract. Continue whipping to medium-stiff peaks — the cream should hold shape but remain silky. Do not overwhip to dryness. Refrigerate until assembly.

Mixed Berries & Assembly

Prepare berries

Gently wash and dry all berries. Hull and quarter strawberries if large. Combine strawberries, raspberries, blueberries, and blackberries in a bowl. Sprinkle 1 tsp granulated sugar (optional) and 1 tsp lemon juice over the berries, toss lightly and let sit 10–15 minutes to macerate and release juices.

Assemble dessert

Place the cooled meringue on a serving plate. Spoon the chilled Chantilly cream into the center of the meringue, spreading slightly but leaving the outer crisp edge visible. Pile the macerated mixed berries on top of the cream, allowing some juices to mingle with the cream.

Garnish and serve

Scatter a few mint leaves over the berries for color. Serve immediately — the meringue is best eaten within an hour of assembly to retain crispness. If not serving right away, keep components separate and assemble just before serving.
