Cook sausages

Heat a large frying pan over medium heat with 1 tbsp vegetable oil. Add 4 sausages spaced apart. Brown on all sides for 6–8 minutes. Reduce heat to low, add 60 ml water to the pan, cover and simmer for 6–8 minutes until sausages are cooked through (internal temp 70°C/160°F). Remove and keep warm on a plate tented with foil.

Cook smoked back bacon

In the same pan (add a little more oil if needed), increase heat to medium-high. Add 4 slices smoked back bacon and fry 2–3 minutes per side until nicely browned and edges crisp. Transfer to the warm plate.

Cook white pudding

Reduce heat to medium. Add the 4 slices of white pudding to the pan and fry 2–3 minutes per side until golden and heated through. Transfer to the warm plate with the bacon and sausages.

Potatoes & Hash

Cook black hash browns

In a separate non-stick pan or the cleaned large pan over medium heat, add 1 tbsp butter or oil. Add 4 black hash browns/patties. Fry 3–4 minutes per side until crisp and heated through. Keep warm on a paper towel-lined plate.

Sauté mushrooms

In the pan used for hash (add the remaining 1 tbsp butter or oil if needed), heat over medium-high. Add 200 g halved mushrooms in a single layer. Season with 1 tsp salt and 1/2 tsp black pepper. Sauté without moving for 2 minutes, then stir and cook until browned and tender, about 4–5 minutes total. Remove to the warm plate.

Grill tomatoes

Place the 2 halved tomatoes cut-side down in a hot dry pan (or use a grill). Cook 2–3 minutes until charred/grilled and just softened. Season lightly with a pinch of salt. Remove and keep warm.

Bread & Toast

Toast bread

Toast 4 slices of thick bread in a toaster or under a hot grill until golden (2–4 minutes). Spread each slice with butter while hot.

Assembly & Serve

Arrange components on warm plates: place sausages, smoked back bacon, white pudding and black hash browns in groups. Add sautéed mushrooms and grilled tomato halves. Place buttered toast on the side. Serve immediately so everything remains hot. Optional: supply ketchup, brown sauce, or buttered tea on the side.
