Mix

Place the ground beef in a large bowl. Add the finely minced onion, breadcrumbs, egg, Worcestershire sauce, garlic powder, kosher salt, and black pepper. Using clean hands or a sturdy spoon, gently combine ingredients until just evenly incorporated—do not overwork the meat or mixtures will become dense.

Portion

Divide the mixture into 4 equal portions (about 4 ounces each). Lightly form each portion into a round patty about 3/4 inch thick and slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb to reduce puffing during cooking.

Rest

Place the patties on a tray, cover loosely with plastic wrap, and refrigerate for at least 15 minutes — this helps them hold together and improves texture.

Cook

Heat a heavy skillet or cast-iron pan over medium-high heat and add half of the vegetable oil, or preheat a grill to medium-high and brush with oil. When the pan or grill is hot (a drop of water should sizzle), place the patties leaving space between them. Cook undisturbed for 3–4 minutes until a brown crust forms. Flip once and cook another 3 minutes for medium doneness. During the last 1 minute of cooking, place a slice of cheddar on each patty and cover the pan or close the grill lid briefly to melt the cheese. Adjust times ±1–2 minutes depending on thickness and preferred doneness (use a thermometer: 160°F/71°C for well done).

Finish

Remove patties to a plate and let rest 3–5 minutes to redistribute juices before assembling.

Buns & Toppings

Toast buns

Spread softened butter on the cut sides of the buns. Heat a clean skillet over medium heat (or use the grill). Place buns cut-side down and toast until golden and slightly crisp, about 1–2 minutes. Watch carefully to prevent burning.

Prepare toppings

While patties cook, wash and dry lettuce leaves, slice tomato into 1/4-inch rounds, and thinly slice red onion. Arrange pickles and condiments (ketchup, mustard, mayonnaise) for easy assembly.

Assemble burgers

Spread about 1 tablespoon mayonnaise on the bottom bun, then place a lettuce leaf, a tomato slice, a hot cheeseburger patty, a couple pickle slices, and a few rings of red onion. Spread ketchup and mustard on the top bun (or apply to taste) and place it on top. Repeat for remaining burgers.

Serve immediately with a side of fries, chips, or salad while burgers are hot.
