Prepare bread

Spread the softened unsalted butter evenly on one side of each bread slice. On the non-buttered side of one slice, spread the Dijon mustard evenly if using.

Assemble fillings

Place the 3 slices of Wicklow ham on top of the mustard-spread (or plain) bread slice, arranging them to cover the surface evenly. Lay the 2 slices of mature cheddar cheese over the ham, slightly overlapping so the cheese covers the ham.

Season

Lightly grind or sprinkle approximately 1 tsp black pepper over the cheese-covered ham for a subtle bite. (Adjust to taste.)

Close and grill (optional hot sandwich)

Close the sandwich with the second slice of bread, buttered side out. Heat a skillet or sandwich press over medium heat. Place the sandwich in the skillet and cook 2–3 minutes per side until the bread is golden brown and the cheddar is melted; press gently with a spatula. If using a sandwich press, cook 3–4 minutes until crisp and cheese is melted.

Serve (cold option)

If serving cold, simply slice the assembled sandwich in half and serve immediately without grilling.

Arrange pickles or gherkins and a portion of potato chips on the plate alongside the sandwich halves.
