Prep bread and butter

Bring the butter to soft room temperature if not already softened. Spread about 1 tablespoon of butter evenly on the outer side of each bread slice (the side that will be outside the toastie). This creates a crisp, golden exterior when cooked.

Prepare inner face

On the unbuttered side of one slice, spread the Dijon mustard (if using) evenly. Season that side lightly with a pinch (~1/8 tsp) of salt and about 1/4 tsp black pepper. If using tomato slices or caramelized onion, arrange them on the mustard-spread slice, leaving a small border to avoid sogginess.

Add cheese

Pile the grated or sliced cheddar evenly on top of the mustard (or directly on the bread if skipping mustard). Aim for about 100 g total so the cheese forms a generous melt. If using parsley, sprinkle it over the cheese.

Assemble sandwich

Place the second bread slice on top, buttered side facing out. Press gently to seal the edges and help the cheese contact both slices for melting.

Set a heavy skillet or nonstick frying pan over medium-low heat. Allow it to warm for 1–2 minutes so it cooks at a moderate, even rate—this helps the cheese melt before the bread over-browns.

Place the assembled sandwich in the pan, buttered side down. Cook for 3–4 minutes undisturbed until the underside is deep golden brown. Keep the heat moderate; reduce to low if the bread is browning too quickly.

Carefully flip the sandwich with a spatula. Cook the second side for 2 minutes, then cover the pan with a lid for 1–2 minutes to trap heat and ensure the cheddar fully melts. If the bread is browning too fast before the cheese melts, lower the heat and extend covered cooking time.

Remove the lid and press gently; the sandwich should feel soft and melty. The cheese should be fully melted and slightly oozing at the edges; both sides should be golden brown and crisp.

Using a sandwich press or panini maker

Preheat the press and cook for 3–5 minutes until golden and cheese is melted, following the manufacturer's guidance.

Using oven or broiler

Preheat oven to 200°C (400°F). Assemble sandwiches with buttered outer sides. Place on a baking sheet and bake 6–8 minutes until golden, then flip and bake another 4–6 minutes. For faster result, broil (grill) briefly on high for 1–2 minutes per side—watch closely to avoid burning.

Rest and slice

Transfer the toastie to a cutting board and let it rest 1 minute to avoid cheese running out when cut. Slice diagonally or down the middle.

Serve

Serve immediately while hot and melty. Add extra black pepper to taste and serve with pickles, ketchup, or a light salad if desired.
