Prepare the custard

In a shallow wide bowl or baking dish large enough to hold a slice of brioche, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until smooth and slightly frothy.

Soak the brioche

Working with one slice at a time, place a brioche slice into the custard and let it soak for 15–20 seconds per side, gently pressing so the custard penetrates but the slice does not fall apart. For very fresh dense brioche, soak up to 30 seconds per side. Arrange soaked slices on a wire rack while you heat the pan.

Heat the pan

Place a large nonstick or cast-iron skillet over medium heat and add 1 tablespoon of unsalted butter. Allow the butter to melt and begin to foam but not brown; reduce heat slightly if it starts to darken quickly.

Cook the first batch

Add 3–4 soaked brioche slices (depending on pan size) in a single layer without overcrowding. Cook 3–4 minutes on the first side until deep golden brown and set, then flip and cook 2–3 minutes on the second side until cooked through and golden. Adjust heat as needed so the interior cooks without burning the exterior. Transfer finished slices to a warm oven set to 200°F (95°C) or keep on a warm plate covered loosely with foil.

Cook remaining slices

Add the remaining 1 tablespoon butter to the pan and repeat with the remaining soaked brioche slices, adding more butter if needed between batches. Wipe out and reheat the pan if it begins to smoke or if crumbs accumulate.

Serve

Stack 2 slices per serving on plates. Dust with powdered sugar if using, top with fresh berries or sliced fruit if desired, and generously drizzle Canadian maple syrup over the French toast. Serve immediately.

Notes and tips

If you prefer a fluffier interior, prepare the custard an hour ahead and refrigerate so the bread can be pre-soaked for 1–5 minutes per side before cooking. For a crisp exterior, cook on medium-high for a shorter time and finish in a 350°F (175°C) oven for 3–4 minutes. All ingredient quantities correspond to 4 servings (2 slices per person).
