Prepare and Dry Shake

Add 2 oz Beefeater gin, 0.75 oz fresh lemon juice, 0.5 oz fresh grapefruit juice, 0.5 oz simple syrup and 0.5 of a large egg white to a cocktail shaker without ice. Seal and dry-shake vigorously for 15–20 seconds to emulsify the egg white and build a frothy texture.

Wet Shake

Open the shaker, add a handful of ice (about 1 cup). Seal and shake vigorously for 15–20 seconds until the shaker is very cold to the touch and the mixture is well-chilled and frothy.

Bitters Finish

Double-strain the cocktail into a chilled coupe or Nick & Nora glass using a fine mesh strainer to remove ice shards and any coagulated bits. Floating 2 dashes of Angostura bitters on the foam and, if desired, use a toothpick to create a simple decorative pattern.

Garnish & Serve

Carefully express the oils from a grapefruit twist over the top of the drink and either drop the twist into the glass or rest a thin wheel on the rim. Optionally top with a small sprig of microgreens or an edible flower for visual appeal. Serve immediately while foam is still stable.
