Prep the Vegetables

Dice the red bell pepper and onion into small pieces. Mince the garlic cloves.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are soft, about 5 minutes. Add minced garlic and cook for another minute until fragrant.

Add Spices

Stir in cumin, paprika, salt, and black pepper, and cook for another 1-2 minutes until the spices are well combined with the vegetables.

Cook the Eggs

Crack the eggs into the skillet over the sautéed vegetables. Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes for medium doneness.

Garnish and Serve

Once the eggs are cooked, remove the skillet from heat and sprinkle fresh cilantro and crumbled feta cheese on top. Serve with sliced avocado on the side.
