Prepare the Duck

Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Sear the Duck

In a large skillet, heat olive oil over medium-high heat. Place the duck breasts skin-side down in the skillet and sear for about 6-8 minutes until the skin is crispy and golden brown. Flip the breasts and cook for an additional 4-5 minutes. Remove from the skillet and let rest.

Make the Sauce

In the same skillet, add garlic and thyme, and sauté for about 1 minute. Pour in the red wine and scrape up any browned bits from the bottom of the pan. Let it simmer for a few minutes until reduced by half.

Add Broth and Finish

Add chicken broth to the skillet and continue to simmer until the sauce thickens. Stir in the butter until melted and well combined.

Serve

Slice the duck breasts and serve with the red wine sauce drizzled over the top.
