This clean, crisp, and refreshing wine is bursting with flavors of pear, green apple, and citrus with a hint of vanilla.

Place the bottle of Pinot Gris in the refrigerator for at least 2 hours before serving so the wine is well chilled (45–55°F / 7–13°C). If you need it faster, submerge in an ice-water bath for 20–30 minutes.

Chill the bottle

When ready to serve, open the bottle carefully and pour a small taste to confirm aroma and flavor.

Thinly slice the pear and green apple (leave the skin on if preferred) into half-moons. Cut 2 thin slices of lemon. If using a vanilla bean, split it lengthwise and scrape out the seeds; if using extract, have it measured and ready.

Prepare fruit and vanilla

Place the pear, apple, and lemon slices in a pitcher. Add the scraped vanilla seeds (or 1/4 tsp extract) and pour the chilled bottle of Pinot Gris over the fruit. Allow to sit 5–10 minutes to pick up fresh fruit/vanilla aromatics. Do not steep long — 5–15 minutes is enough to enhance aroma without altering the wine's clean profile.

Infuse lightly for service

If you prefer a lighter, more refreshing drink (a Pinot Gris spritz), gently stir in 1/2 cup cold sparkling water or club soda just before serving. Taste and adjust: add more soda for a milder wine presence or keep it undiluted to retain full flavor.

Optional spritz

If serving straight, pour the chilled wine into chilled white-wine glasses and optionally float a single slice of pear or green apple for visual appeal. If serving the infused wine or spritz, fill glasses with ice (about 1/2 cup per glass), strain or spoon in a few fruit slices, pour the wine mixture over ice, and garnish with a mint sprig.

Serve

Enjoy immediately. The wine is best consumed the same day; residual infused wine can be refrigerated for up to 24 hours but will lose freshness and sparkle if soda was added.
