Prepare ice and glass

Fill a highball or Collins glass with crushed ice to chill while you assemble the drink.

Muddle mint

In a cocktail shaker or mixing glass, place the 6 fresh mint leaves and the 0.5 oz simple syrup. Gently muddle the mint 4–6 times — press to release aroma but avoid shredding the leaves into bits.

Add spirits and citrus

Add 2 oz Jim Beam Honey and 0.75 oz fresh lemon juice to the shaker with the muddled mint and simple syrup.

Add tea and chill

Pour in 6 oz chilled black iced tea. Add a few large ice cubes to the shaker, cap, and gently roll or shake briefly (about 5 seconds) to combine and lightly chill without overly diluting.

Assemble and serve

Dump the crushed ice from the chilled glass if you prefer and refill the glass with fresh crushed ice. Strain the cocktail mixture into the prepared glass over the crushed ice, using a fine strainer if you prefer less mint leaf in the drink.

Garnish

Express a lemon wheel or wedge over the drink to release oils, then drop it in. Slap the mint sprig between your palms to release aromatics and place it atop the drink as a garnish.

Final taste adjustment

Taste and adjust sweetness or acidity if needed: add 0.25–0.5 oz more simple syrup to sweeten or 0.25 oz more lemon juice to brighten. Stir gently to incorporate any additions.
