Prepare strawberry puree
If you don't have ready-made puree, hull and quarter 3–4 medium strawberries (about 3 oz). Place in a blender or food processor with a teaspoon of water and blitz until smooth. Strain through a fine mesh if you want a silkier texture with fewer seeds (optional). Measure out 1 oz.
Chill glass
Place a martini or coupe glass in the freezer for at least 5 minutes or fill it with ice water while you prepare the cocktail to ensure the drink stays cold.
Combine ingredients
In a cocktail shaker, add 6 ice cubes, 2.5 oz Gordon's gin, 0.5 oz fresh lime juice, 1 oz strawberry puree, 0.75 oz pineapple juice, and 0.25 oz simple syrup (use the syrup only if your strawberries are not very sweet or you prefer a sweeter cocktail).
Shake
Secure the shaker and shake vigorously for about 12–15 seconds, until the shaker is very cold and slightly frosted. This both chills and dilutes the drink to balance flavors.
Strain and serve
Discard the ice or water from the chilled glass. Double-strain the mixture (using the shaker strainer and a fine mesh if you strained the puree earlier) into the chilled martini or coupe glass to remove any pulp or ice shards.
Garnish
Thread a halved fresh strawberry or place a whole small strawberry on the rim and add a lime wheel or twist to the edge of the glass. Optionally express a lime twist over the drink for an aromatic finish.
Serve
Serve immediately while cold. The cocktail yields a bright, slightly fruity martini with a balance of tart lime, sweet strawberry and tropical pineapple notes.
