Select a clean, room-temperature Bordeaux-style wine glass. Ensure it is free of soap residue and fingerprints to avoid affecting aromas.

Prepare glass

Use a corkscrew to remove the cork gently. Wipe the bottle neck with a clean cloth to remove any sediment or dust.

Open the bottle

If the bottle is younger or was recently opened, pour the entire bottle into a decanter and let it breathe for 20–40 minutes to soften tannins and open up dark fruit and baking spice aromas. For an older bottle, taste a small amount first to decide whether decanting is needed.

Pour approximately 150 ml (about 5 oz) into the glass, filling to the widest part of the bowl to allow swirling and aroma development.

Hold the glass by the stem, give the wine a gentle swirl to release aromas, then inhale gently to identify notes of blackberry, black currant, licorice, and baking spice. Sip, hold for a moment on the palate to observe texture and finish, then enjoy.

Place the cheese, charcuterie, toasted baguette slices or crackers, and dark chocolate on a small board or plate. Keep portions small so they complement rather than overpower the wine.

Arrange accompaniments

For each sip of Cabernet Sauvignon, try a small piece of aged cheddar or Manchego to contrast the wine's acidity and tannin with savory fat. Taste a piece of dark chocolate to echo the wine's dark fruit and bittersweet notes. Use the toasted bread or crackers as a neutral palate cleanser between bites.
