Chill glass

Place a large wine glass (or rocks glass) in the freezer for 5–10 minutes or fill it with ice water while you prepare ingredients to ensure the cocktail stays cold.

Prepare glass

If you chilled the glass with ice water, empty the glass. Fill the chilled glass about halfway with fresh ice cubes (approximately 1 cup).

Add Aperol

Pour 2 oz Aperol over the ice.

Add lemon juice

Add 1/2 oz freshly squeezed lemon juice to the glass. This brightens the cocktail and balances Aperol's sweetness.

Top with Champagne and Sprite

Slowly pour 3 oz chilled Champagne (or dry Prosecco) into the glass, then add 1 oz Sprite (or another lemon-lime soda). Pour gently to preserve the bubbles and avoid overflow.

Stir gently

Using a bar spoon, stir gently 4–6 times to combine ingredients without flattening the sparkling wine.

Garnish and serve

Garnish with a lemon wheel on the rim or floated in the glass. Serve immediately while fizzy.
