Preparation

Infuse Pineapple

Start by infusing pineapple in rum for at least 24 hours before preparing the cocktail. Combine fresh pineapple chunks with Plantation 3 Star Rum and let it sit in a cool, dark place.

Mix the Cocktail

In a shaker, combine the infused pineapple rum, Amaro, pineapple infusion, Green Chartreuse, and lime juice. Fill the shaker with ice and shake vigorously for about 15 seconds.

Strain and Serve

Strain the mixture into a chilled cocktail glass. Carefully add a scoop of pistachio ice cream on top.

Add Burnt Cinnamon

Sprinkle burnt cinnamon over the ice cream for added flavor and aroma. You can achieve burnt cinnamon by lightly toasting ground cinnamon in a dry pan until fragrant.
