Pita Bread Preparation

Activate the Yeast

In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough

In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough

Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

Shape the Pitas

Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and flatten it into a disc about 1/4 inch thick.

Second Rise

Cover the discs with a damp cloth and let them rest for about 30 minutes.

Preheat the Oven

Preheat your hearth oven or conventional oven to 475°F (245°C).

Bake the Pitas

Place the discs on a baking stone or baking sheet and bake for about 5-7 minutes, until they puff up and are lightly golden.

Cool and Serve

Remove the pitas from the oven and let them cool on a wire rack. Serve warm with your favorite Mediterranean dips or dishes.
