    Prepare glass

    Place a large ice cube or ice sphere into a chilled rocks glass. If you prefer the drink slightly colder from the start, pre-chill the glass in the freezer for 10–15 minutes before assembling.

    Combine ingredients

    In a cocktail shaker, add 2 oz Thomas Tew Single Barrel Rum, 0.5 oz fresh lime juice, 0.25 oz simple syrup, 0.25 oz amaro or dark coffee liqueur (optional), and 4 dashes Mr. Black Orange Coffee Bitters.

    Add ice and shake

    Fill the shaker with ice (about 1 cup). Shake vigorously for 12–15 seconds until the shaker is cold to the touch and well diluted.

    Strain

    Double-strain (or fine-strain) the cocktail into the prepared rocks glass over the large ice cube/sphere to ensure a smooth texture and to keep small shards out of the finished drink.

    Express and garnish

    Take an orange peel and express the oils over the surface of the cocktail by holding it skin-side down about 2–3 inches above the drink and giving it a firm squeeze. Run the peel around the rim of the glass, then drop it into the drink as a garnish.

    Serve

    Serve immediately while cold. The drink balances the rum's molasses and oak notes with bright citrus, gentle sweetness, and the bitters' orange-coffee complexity.
